PREP NOTES:

INGREDIENTS:

3 – 4 large sweet potatoes

¼ cup butter

¼ cup pure maple syrup

¼ cup brown sugar

¼ teaspoon of ground cinnamon

GLAZED SWEET POTATOES

Serves – 4

  1.  Boil the sweet potatoes in a large saucepan.  Boil for about 20 – 25 minutes.  Boil until potatoes are firm, not soft. They will cook further just before serving.
  2. Cool, peel and slice or cut into chunks.  
  3. Layer in a 8x8x2 inch pan.  Preheat the oven to 350 degrees. 
  4. In a small saucepan, add the butter, pure maple syrup, brown sugar & cinnamon.
  5. Cook on medium high heat.  Once it comes to a boil, turn to simmer.  Let the brown sugar caramelize.  Stir constantly.
  6. Pour overtop of the sweet potatoes. Bake uncovered for 30 – 40 minutes. Cook until glaze is bubbly and sweet potatoes are cooked through. 


  • NOTES: This recipe can be made 1 – 2 days ahead of time. Store covered in the fridge.
