PREP NOTES:

INGREDIENTS:

½  teaspoon salt

½ teaspoon pepper

2 Tablespoons butter

2 Tablespoons honey

1 Tablespoon fresh squeezed lemon

Rind of half the lemon

1 teaspoon parsley (1 Tablespoon if using fresh)

6-8 carrots

1/2 cup water

1/2 teaspoon salt

LEMON & HONEY GLAZED CARROTS

6 servings

  1.  In a small saucepan, add salt, pepper, butter, honey, fresh squeezed lemon, rind of the lemon, and the parsley.
  2. Heat on medium high heat, until the honey is dissolved and the butter is melted.  Turn off heat.  Let remain on the burner keeping the lid on the pan to stay warm until serving. 
  3. Peel and evenly slice the carrots.  
  4. Add water & salt to a medium sized saucepan, bring to a boil and cook the carrots for 5 minutes, or until tender. 
  5. Drain carrots and drizzle the glaze over top and stir.  Serve warm. 


  • NOTE:  The sauce part of this side dish can be prepared a day or two ahead, then just peel and slice, cook the carrots, warm the sauce and it’s ready.
