PREP NOTES:

INGREDIENTS:

1 pound of fresh Brussel Sprouts

4 – 6 slices of bacon

3 Tablespoons of Avacado Oil or Olive Oil

Kosher Salt and Black Pepper to taste

ROASTED BRUSSEL SPROUTS

Serves – 4

  1. Wash and trim the ends of the Brussel Sprouts. Slice the Brussel Sprouts in half. 
  2. Slice the bacon into ½ inch slices.  Fry in a small frying pan, soak up any bacon grease with a paper towel.  Set aside.
  3. On a half sheet pan, layer with foil or parchment.  
  4. Place the brussel sprouts in a tupperware type bowl.  Pour the Avocado Oil or Olive Oil over the top of the brussel sprouts, then sprinkle with kosher salt and black pepper to taste.  Stir to evenly mix.  Pour into the half sheet pan.  Use a rubber scraper and scrape the oil and salt and pepper from the sides of the bowl.  Pour over top of the brussel sprouts. 
  5. Bake in a preheated 400 degree oven.  If you have a convection oven, place on the convection roast setting.  Stir after 15 minutes.  Cook 10 minutes more, until the Brussel Sprouts are golden brown.  Add the bacon and stir. Let cook for about 5 minutes for the bacon to crisp.  Once the Serve immediately.
